Out of several documents types that are created and stored in end user (mobile app user)'s phones, are info docs stored on user device ?

No they’re not. The info docs are generated on the server to record metadata about the doc like when it was first replicated to couchdb. These are stored in the sentinel db which isn’t replicated down to the phones. More information and examples in the docs.
